Mechoui Ceremony to do in Marrakech

Mechoui is a lamb based meal. We use the freshest lamb which has been hung to drain overnight allowing for a tender outcome.
Every morning, the ritual starts very early with the preparation bycutting/marking the lamb to allow the heat to go deeper into the flesh.
The traditional ovens are heated with wood, and after the lowering of the lamb which have been speared onto long “kebabs” into the conic cavity of the oven, they are then sealed with mud for 2.5 hours until the meat has been cooked.Bonne appetit!

Flow Of The Day:

  • Early Morning start the preparation and the cutting of the Lamb
  • Ovens heated with wood in advance
  • Put the lamb in the Ovens
  • Seal the Ovens ( about 2h )
  • Local authentic Breakfast
  • Walk in the Nature
  • Cook own fresh bread
  • Back to the Mechoui Break
  • Open the Ovens and pull up the slow cooked lamb
  • Feast Mechoui Lunch

Sustainability

We support local farmers and sheepherders by buying part of our vegetables and sheep from them. Our partnership is based on the respect of organic farming both in growing their products and feeding the animals. We also support cultural, environmental activities in the villages neighbouring our Mechoui projects.
