Medfouna as a Marrakech Food
The stuffed bread Medfouna as a Marrakech Food Originates from the Tafilalet oasis and the Rissani town by the Merzouga Sahara dunes in the Southeast of Morocco.
THE MEDFOUNA RECIPE
The main ingredients for the Medfouna are:
- Fine semolina flour for the dough
- Small pieces of meat: Lamb, beef, or chicken cooked in a pan. See our vegetarian Medfouna here
- Olive oil and spices: Salt, pepper, paprika, cumin, cinnamon
- Oignons: Chopped finely
- Boiled eggs ( 2 optional ): cut into rounded pieces
On a flat working surface, roll out half the doughin a circle of about 30cm ( about 11 inches ).
Transfer the dough into a baking dish. spread the meat and the other mixed ingredients evently over. Cover up with the other half daugh to make a circular piece. Make sure to seal the edges around. Bake for about 20 mn and serve warm.
